Easy Sugarless Strawberry Jam

Driscolls has some of the best berries. They also have great recipes. This one is low fat, sugar free and ready for most diabetics.

Measuring cup
Measuring spoon, 1 1/2 Tbl

Ingredients
1 1/2 C Whole or sliced frozen unsweetened strawberries
1/4 C Frozen apple juice concentrate
1 1/2 Tbl Tapioca
Recipe
Serves: 2 cups
Time required: Prepare 2 minutes Cook: 30 minutes
Difficulty: Easy
Directions
1. Blend frozen strawberries and apple juice in a blender; do not puree.
2. Add mixture to tapioca in pot. Let stand 5 minutes.
3. Slowly bring to a boil on medium heat, stirring constantly.
4. Remove from heat and cool 20 minutes.
5. Pour into clean containers and store in refrigerator.
6. Use within 3 weeks.
Serve with
Ice cream, toast, french toast, spider crackers, or anything you like.
Variations
*Use raspberries or blackberries instead of strawberries.
