    Chicken BBQ Pizza

    Recipe Introduction

    This is a very easy recipe. One you can have your young kids make. What you would need to get for the kids is Tyson cubed, pre cooked chicken. Also, get a plastic lettuce knife found in your produce section. It is serrated and will cut most vegetables, but not fingers. With the vegetables and chicken, you would not have to cook them. Just put them on the pizza and cook it. Even the kids could teach dad to make it next time, it is so simple.

    Knife
    Cutting board
    Frying pan
    Stirring spoon
    Baking sheet
    Rolling pin
    Non stick spray
    Hot pads


    Ingredients

    6 Rhodes Texas rolls, thawed and risen
    6 oz Boneless, skinless chicken breasts, diced
    1/2 Chopped onion
    1 C Barbecue sauce, Bulls Eye is good
    1/2 Green pepper, chopped
    1/2 Red pepper, chopped
    1/2 C Sliced mushrooms
    1 Small tomato, diced
    1 C Grated mozzarella cheese
    Flour as needed to roll out dough

    Recipe

    Serves: 3 Kids or one adult
    Time required: Prepare: 15 minutes Cook: 25 minutes
    Oven temperature: 350 degrees
    Difficulty: Easy


    Directions

    1. Cut up all ingredients that need it.

    2. Cook chicken and onion in 1/2 cup barbecue sauce until chicken is no longer pink. This should glaze the chicken. Set aside.

    NOTE: You can cook the vegetables with the chicken when it is about half way done to get less sharp flavors in like the onions.

    3. Press thawed rolls together into a ball. Roll into a 13-inch circle.

    4. Place on a 12-inch pizza pan sprayed with non-stick cooking spray.

    5. Bake at 350F 10 minutes.

    6. Spread remaining 1/2 C barbecue sauce on dough. Top with all other ingredients. Sprinkle with cheese.

    7. Bake at 350F 10-15 minutes.


    Serve with

    Green salad, bread sticks and dip, smoothies, and fruit in yogurt for dessert.

    Veggie sticks and bread sticks. Then have smoothies with root beer floats for desserts.


    Variations

    *This is a great one for the kids to make. Really no mess, quick, everything is already done, and all they have to do is pour and stack.

    *Include any vegetables you like. Include tomatoes, broccoli, canned mushrooms, and anything else.

    *Put bacon bits with tomatoes also on this pizza.

    *This can also be cooked on the bbq grill, and in a dutch oven.
