    Danielle's Zuccini Summer Stirfry

    Recipe Introduction

    This is a simple and easy stirfry with a few different ingredients to make it different from your regular versions.

    List of Ingredients

    Tools

    Cutting board
    Knife
    Wok
    Stirring spoons
    Measuring spoons, 1/2 Tsp, 1 Tsp, 1 Tbl


    Ingredients

    2 large Zuccinis (green, yellow or both), sliced in circles
    1 large Tomato, peeled, sliced
    1 Carrot, finely chopped
    5-6 White mushrooms, sliced thin
    1/2 Granny smith apple, sliced thin
    1/2 Vidalia onion, minced
    1/2 Tsp Fresh ginger, minced
    2-3 cloves Garlic, minced
    5 Tbs Olive oil
    1 Tsp Brown sugar
    Fresh parsley
    Salt and pepper to taste

    Recipe

    Serves: 4-6
    Time required: Prepare: 15 minutes Cook: 25 minutes
    Difficulty: Average


    Directions

    1. Prepare all vegetable and other ingredients.

    2. Heat 3 tbs. olive oil in wok. Add onion, ginger, garlic, and parsley. Simmer over medium heat until veggies are golden brown.

    3. Add mushrooms and simmer until they shrink and begin to make their own sauce.

    4. Add all other veggies (zuccini, tomato, carrot, apple) and seasonings (brown sugar, salt and pepper).

    5. Reduce heat to medium and cover. Allow veggies to simmer for 15-20 minutes, stirring occasionally, until tender. Add extra olive oil if necessary. Be sure to mix ingredients well as brown sugar has a tendency to become clumpy and sticky.

    6. Serve over brown rice.


    Serve with

    A soup as a starter, fruit for dessert.

    Deep fried appetizers like pot stickers, and fried cheese.


    Variations

    *Any vegetables you have.

    *Add in any meat you like.

    *Do not cook till everything is soft. Just cook long enough on high heat, till they just start to get soft.
