    Fruit N Nut Baked Yams

    Recipe Introduction

    Allen sells alot of great products, and they are used by a majority of the foodservice industry. This is a good recipe that is a little different, but similar enough.

    List of Ingredients

    Tools

    Baking pans 12 x 2 1/2 x 20
    Measuring cup
    Measuring spoon, 1 Tbs
    Bowl
    2 Stirring spoon
    2 Pots
    Knife
    Cutting board
    Strainer
    Non stick spray


    Ingredients

    3 #10 Can Drained Princella cut yams
    3 Qts Canned Apricot halves
    1/3 C Lemon juice
    3 C Light brown sugar
    1 Tbs Ground cinnamon
    1 Tbs Pumpkin pie spice
    1 Tbs Orange extract
    1 1/2 Qts Chopped walnuts
    3/4 C Melted butter or margarine
    1 1/2 C Orange peel, juilenne
    3 Qts Boiling water

    Recipe

    Serves: 50
    Time required: Prepare: 20 minutes Cook: 30 minutes
    Oven temperature: 350 degrees
    Difficulty: Average


    Directions

    1. Preheat oven to 350 degrees.

    2. Melt butter.

    3. Put cut yams in baking pans. The closer they are, the juicer they will come out. The more spread out, you will get a stickier coating.

    4. Mix apricots and lemon juice in bowl.

    5. Put apricots on top of yams.

    6. Mix brown sugar, cinnamon, pumpkin spice, orange extract, and walnuts in melted butter pot.

    7. Sprinkle mix over yams and apricots.

    8. Bake uncovered for 25 to 30 minutes.

    9. Boil orange peels for 2 minutes. Drain. Save, and top serving when plating.


    Serve with

    Any nice dinner.

    Thanksgiving turkey.

    Any meat like turkey, pork, ham, steak, and chicken.


    Variations

    *Use a little orange juice.

    *Use maple syrup.

    *Use mollasses.

    *Use almonds or pecans.
