Recipe Introduction
This is a simple recipe that you can season to meet your needs. Plus, this is a quick recipe you can make to give an unexpected vegetarian dinner guest. Serve this as an appetizer on lettuce to have a low cal eye appealing finger food.

Ingredients
1 package tofu drained and mashed
1/3 to 1/2 C No cholesterol mayonnaise
2 Tsp Mustard
1/2 Tsp Minced garlic or garlic powder
1/2 C Chopped green pepper
1/2 C Chopped red pepper
1/2 C Chopped celery
3 Tbs Grated carrot
2 Tbs Chopped dill pickles
2 Tsp Soy sauce
1/2 Tsp Salt and pepper (to taste)

Serves: About 2 Cups
Time required: Prepare: 15 minutes

Directions
1. Mix all ingredients well. Cover and refrigerate until serving time.
NOTE: This recipe has absolutely no cholesterol, is low in calories and high in fiber, vitamins, protein and minerals. In fact tofu (soybean cake) is one of the highest forms of protein available. Tofu can also be used as a meat extender by blending with ground beef or as an extender with scrambled eggs.
Serve with
Serve on lettuce leaves, crackers for appetizers, or use as a sandwich filling.
