4 cups grated sharp cheddar cheese (I like Vermont Cabot)
1 medium onion, finely chopped
2 cloves garlic, minced
2 jalapeño peppers, finely chopped
1 cup mayonnaise
½ cup chopped green onion
1 teaspoon garlic salt
Recipe
In a large bowl, combine all ingredients. Stir until well-blended. Refrigerate overnight to allow flavors to meld. Yields about 4½ cups of spread for crackers.
