25 DEGREES' STRAWBERRY MILKSHAKES

Strawberries macerated with rum
1 cup sugar
3 cups strawberries, quartered
2 Tablespoons vanilla paste, or 1 vanilla bean, halved lengthwise
2 teaspoons lemon juice
1/2 cup dark rum (I recommend Mount Gay)
Pinch of salt
Combine the sugar, strawberries, vanilla paste, lemon juice, rum, and salt with 1/2 cup water. Set aside and allow to macerate for several hours.
Milkshakes
1 qt vanilla ice cream
2 cups strawberries with macerating liquid
1 cup milk
Make the shakes in two batches. In a blender, combine four 4-oz rounded scoops of ice cream, 1 cup of strawberries, and 1/2 cup of milk. Blend until smooth. Pour into 2 glasses. Repeat. Serves 4.
