SHRIMP PANCAKES

6 large eggs
1 cup chopped cooked shrimp
1 small onion, minced
½ teaspoon salt
Recipe
Beat eggs. Stir in remaining ingredients. Cook like you would ordinary breakfast pancakes, on a well-greased hot griddle, turning as soon as the egg is set. Makes 4 servings.
Note: If you are using canned shrimp, make sure you rinse and drain them well, to remove any excess salt.
