    3 egg yolks, beaten
    ½ (250 ml) pint milk
    1 pint (500 ml) double/heavy cream
    4 oz. (100g) sugar
    2 cups strawberries
    1 teaspoon vanilla extract
    ¼ teaspoon salt

    Recipe



    Mash strawberries with half of the sugar (2 oz or 50g). Place aside. In a separate pan, mix the egg yolks with the milk, salt and remaining sugar. Put over medium heat just until the boiling point (stirring constantly). DO NOT LET BOIL.

    Transfer the mixture into a chilled bowl to cool. Refrigerate for up to 3 hours, stirring the mixture from time to time. When Cool, stir in the cream and vanilla. Then add it to the strawberry mixture.

    Put the entire mixture into an ice cream maker and follow the manufacturer's instructions.
