I cup crunchy style peanut butter
1 cup sugar
2 eggs, beaten
1/2 cup milk
1 teaspoon coconut extract
1 cup flaked, sweetened coconut
2 cups flour
2 teaspoons baking powder
Recipe
Cream together the peanut butter and the sugar. Beat in the eggs, milk and extract, one at a time, and then the coconut. In a separate bowl, mix together the flour and the baking powder. Add to the peanut butter mixture, until all incorporated. Fill greased muffin tins. Bake at 375 degrees for 20-25 minutes or until they test done. Makes 1 dozen.
