Recipe Introduction
This recipe makes 30 muffins. Muffins can be frozen and thawed out the night before you want to serve them.
List of Ingredients
1 (18 oz) box yellow cake mix
1 teaspoon coconut extract
1 teaspoon rum extract
1 cup flaked or shredded coconut
1/2 cup chopped walnuts
1 cup crushed pineapple (drained)
About half of the pineapple juice
Recipe
Prepare cake mix in a mixer bowl, following package directions. Add other ingredients. Mix 1 minute. Do not over mix. Grease tins. Fill 3/4 full. Bake 350 for 15 - 20 minutes. Allow to stand 10 minutes, before removing from muffin tins.
