PINEAPPLE BRAN MUFFINS

1/2 cup sugar
1/3 cup shortening
1/3 cup honey
2 large eggs
1 1/3 cup shreds of wheat bran cereal
1 cup milk
1 can crushed pineapple, well drained
1 1/2 cup flour
1 1/2 teaspoons baking soda
Recipe
Combine first 3 ingredients in a large bowl; beat at medium speed with an electric mixer until blended. Add eggs, one at a time, beating just until yellow disappears. Stir in cereal, milk, and pineapple. Combine flour and soda; add to creamed mixture,
stirring just until moistened. Spoon into paper-lined muffin pans, filling 3/4 full.
Bake at (preheated) 400° F for 18-20 minutes. Remove from
pans immediately. Yield: 18 muffins.
