10 cups ground zucchini
4 cups ground onions
5 Tablespoons salt
2½ cups cider vinegar
6 cups sugar
1 Tablespoon nutmeg
1 Tablespoon tumeric
2 Tablespoons celery seed
½ teaspoon ground pepper
ground red & green peppers
Recipe
Ground zucchini, onions & salt--let stand overnight.
In the morning, drain zucchini & wash. Drain again. Make sure all the water is off.
Combine the rest of the ingredients and make a sauce. Add to the zucchini/onions. Cook 30 minutes. Stir often while cooking.
Pack loosely in sterilized jars, leaving about ¼ inch at the top. Seal and process in hot water bath for 5-15 minutes (depending on altitude). Cool and store.
