    FRENCH BREAD PIZZA

    1 cup fresh tomatoes, chopped

    1/4 cup olive oil

    1/2 cup fresh grated Parmesan cheese, divided

    2 Tablespoons garlic (more if preferred)

    2 Tablespoons fresh basil, chopped (do not substitute dried)

    1/2 teaspoon freshly ground black pepper

    1/2 cup Mozzarella cheese, grated

    1/2 loaf French bread

    Recipe



    Preheat oven to 350°.


    Combine tomatoes, olive oil, 1/4 cup of Parmesan, garlic, basil and pepper in a non-metal bowl. Let stand at room temperature for several hours.


    Split the bread lengthwise and place on a baking sheet. (You may have to trim a little of the bottom for the bread to be level.)


    Spoon half the tomato mixture over each half of the French bread. Sprinkle with Mozzarella cheese and remaining 1/4 cup Parmesan Add more black pepper if desired. Bake at 350° until cheese has melted and edges of bread are very lightly browned, 10-15 minutes.



    Makes 2 servings
