MOZZARELLA CHICKEN

6 pieces boneless, skinless chicken breast
4 Tablespoon olive oil
2 Tablespoons butter
1 clove garlic, minced
Bread Crumbs (I used seasoned)
2 eggs (can substitute egg beaters to equal 2 eggs)
1 teaspoon chicken flavored bouillon granules
1 can chicken broth
6 slices of Mozzarella cheese
Recipe
Dip breasts in eggs, than in breadcrumbs. In a large skillet, heat olive oil butter and garlic, and stir in the bouillon granules. Make sure to keep the heat on LOW so that the butter doesn't burn. When the oil is hot, increase the heat and brown chicken on both sides. Lower heat again, add broth and simmer until hot. Add Mozzarella to the top of the chicken, allowing it to melt a little.
