PASTA SALAD

List of Ingredients
1 package of rotini
1 Tablespoon light olive oil
1 cup of black or green olive slices
1 small jar of pimentos, chopped
1/2 cup green onions, chopped
6 oz thinly sliced pepperoni, diced
2 roma tomatoes, finely chopped
1/4 cup fresh parsley, finely chopped
Vinaigrette dressing:
3 Tablespoons white or balsamic vinegar
3/4 cup light olive oil
1 clove garlic, crushed
1/4 cup fresh basil, chopped
Salt and ground pepper to taste
Recipe
Cook pasta and toss with olive oil. Mix the pasta and remaining ingredients together. Toss with vinaigrette dressing. Serve with warm focaccia bread drizzled with olive oil. Have fresh ground pepper and grated parmesan cheese available on the side for individual flavor. Serves 4.
