    PEPPERONI MINESTRONE SOUP

    List of Ingredients




    7 cups beef broth
    2 cups coarsely chopped cabbage
    1 can Italian stewed tomatoes
    1 medium onion, sliced
    1 carrot, sliced
    1 tbsp. dried Italian seasoning
    2 cloves garlic, chopped fine
    1 pkg. frozen Italian green beans
    2 small zucchini, sliced
    1 pkg. pepperoni slices
    1 can kidney beans, drained Salt & Pepper grated Parmesan cheese

    Recipe



    Combine the first 7 ingredients. Bring to boil. Reduce heat and simmer 20 minutes.
    Add green beans, zucchini, and pasta. simmer 15 minutes.
    Stir in pepperoni & Kidney beans. Heat through.
    Sprinkle grated cheese over bowls of soup just before serving.

    Notes: Minestrone soup is very versatile, and you can substitute the vegetables you like, if you don't like the ones in the recipe.
