List of Ingredients
1 cup egg substitute
1 tsp. baking powder
1 1/2 cups sugar
1 tsp. baking soda
1 Tbls. vanilla
2 tsp. cinnamon
1/2 cup oil
1/2 tsp. ginger
2 cups zucchini, ground (use smallest holes on grater)
1/2 tsp. nutmeg
3 cups flour
1/4 tsp. ground allspice
Recipe
In a large bowl, mix first 5 ingredients together (egg substitute through zucchini); set aside.
Combine dry ingredients (flour through allspice) in a separate bowl. Add dry ingredients to zucchini mixture and pour into 2 (9 x 5) loaf pans.
Bake at 350° for 45 to 60 minutes. (I only baked mine for 30 minutes and it was done, so be careful. It was very moist!) Enjoy
