YUMMY GOURMET CHICKEN SALAD

Serves: 8 (1/2 cup each)

List of Ingredients
4 cups cubed, cooked chicken breast.
2 tbs fresh lemon juice
1 C Reduced Fat Miracle Whip
1 C Pineapple tidbits in juice-drained.
1 C halved green seedless grapes
1/2 c slivered almonds
1/2 c canned water chestnuts--chopped.
Recipe
In large bowl, toss chicken with lemon juice and cover and chill for 2 hours
Mix rest of ingredients into the chicken until well blended, Chill until serving time
Really good on diet bread with a lettuce leaf--but be sure to add extra points. This was run through the recipe builder and a serving is a generous 1/2 cup
Special Notes
Points are correct--ran through recipe builder! :) Can reduce points further by decreasing miracle whip and omitting almonds but it's really yummy and satisfying the way it is! :) Enjoy!
