1 1/2 pounds Ground Beef, extra lean
2 cups Monterey Jack cheese -- shredded
3 cups Tortilla Chips -- crumbled
1 1/4 ounces Taco Seasoning mix
1 large Onion -- chopped
1/4 cup Black Olives -- sliced
1 tablespoon Chili Powder
1 1/2 cups Tomato Sauce
2 1/2 cups Water
6 cups Iceberg Lettuce -- shredded
1/2 cup Sour Cream, light
2 large Tomatoes -- chopped
Recipe
Preheat oven to 350 degrees F. In a large skillet, brown lean ground beef and onions. Drain any fat from mixture. Add taco seasoning, chili powder, tomato sauce, chopped olives and water. Simmer for 10 minutes. Gently fold in corn chips and 2/3 of cheese. Put into a 9 x 13 inch baking pan or large casserole dish. Sprinkle remaining cheese on top. Bake for 30 minutes.
Serve with lettuce, sour cream, and chopped tomatoes as desired.
