GLAZED POPPY SEED CAKE

List of Ingredients
- 1 1/2 cups of sugar
- 1 cup softened butter
- 4 egg yolks
- 1 cup sour cream
- 1 tsp. baking soda
- 2 cups all purpose flour, sifted
- 1/4 cup poppy seeds
- 4 tsp. vanilla extract, divided
- 4 egg whites, stiffly beaten
- 1 cup of powdered sugar
- 2 TBL. milk
- 1 1/2 TBL. melted butter
Instructions
- Preheat oven to 350. Grease and flour a 9 1/2" tube pan.
- Place sugar and butter in a large bowl. Beat with electric mixer on high speed until creamy. Beat in egg yolks.
- Mix sour cream and baking soda in a small bowl. Add mixture alternately with flour to creamed mixture, beating well after each addition. Stir in poppy seeds and 3 tsp. vanilla extract. Fold in beaten egg whites.
- Spoon into prepared tube pan. Bake until a toothpick inserted near the middle comes out clean, about 45 minutes. Cool in pan for 15 minutes.
- For glaze, combine the powdered sugar, milk, melted butter, and the remaining vanilla in a small bowl. Beat with electric mixer on medium speed until smooth. Transfer cake to a cake plate. Drizzle glaze over warm cake.
