    HEARTY PASTA CASSEROLE

    List of Ingredients


    • 1(16oz.) package penne pasta
    • 1(12oz.) package fresh mushrooms
    • 2 TBL. olive oil
    • 2 shallots, minced
    • 2 cloves garlic, minced
    • 1 pound ground beef
    • 1(14.5oz.) can stewed tomatoes, undrained
    • 1(8oz.) can tomato sauce
    • 2 tsp. dried basil
    • 1/2 cup heavy cream
    • 1/2 cup grated Parmesean cheese, divided


    Instructions


    1. Preheat oven to 400. Lightly grease a large casserole dish.
    2. Cook penne pasta according to package directions. Slice mushrooms and set aside.
    3. Heat olive oil in a large saucepan over medium heat. Add the shallots and garlic; saute for 2 minutes.
    4. Add mushrooms and beef to the saucepan. Cook until beef is browned, about 5 minutes. Stir in tomatoes with juice, tomato sauce, basil and cream; simmer for 5 minutes. Remove from heat.
    5. Add cooked pasta to saucepan. Stir in 1/4 cup Parmesean cheese; mix well. Spoon pasta mixture into prepared casserole dish. Sprinklw remaining Parmesean cheese over top. Cover and bake for about 15 minutes. Uncover; bake until cheese is melted, about 10 minutes longer.
