    ZUCCHINI PARMESEAN BAKE

    List of Ingredients


    • 1 TBL. butter plus 1 tsp. butter, divided
    • 4 cups sliced zucchini
    • 1 cup freshly grated Parmesean cheese
    • 1/4 cup mayonaise
    • 1/4 cup sour cream
    • 3/4 cup chopped onion
    • 1/4 cup chopped green bell pepper
    • 2 large eggs, beaten
    • 1/2 tsp. salt
    • 1/8 tsp. pepper
    • 1/4 cup bread crumbs


    Instructions


    1. Preheat oven to 350. Butter a 1 1/2 quart baking dish.
    2. Melt 1 TBL. butter in a large skillet over medium high heat. Saute zucchini in butter until tender, about 3-4 minutes. Drain well.
    3. Combine Parmesean cheese, mayonaise, sour cream, onion,
      green pepper, eggs, salt and pepper in a large bowl. Add the zucchini and toss lightly to mix. Spoon mixture into prepared baking dish.
    4. Mix bread crumbs and the remaining butter in a small bowl. Sprinkle over zucchini mixture. Bake until lightly browned, about 30 minutes.

    5. VARIATION: Try adding 1 1/2 cups chopped, seeded fresh tomatoes plus 1/4 cup bread crumbs to the zucchini mixture.
