ZUCCHINI PARMESEAN BAKE

List of Ingredients
- 1 TBL. butter plus 1 tsp. butter, divided
- 4 cups sliced zucchini
- 1 cup freshly grated Parmesean cheese
- 1/4 cup mayonaise
- 1/4 cup sour cream
- 3/4 cup chopped onion
- 1/4 cup chopped green bell pepper
- 2 large eggs, beaten
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 cup bread crumbs
Instructions
- Preheat oven to 350. Butter a 1 1/2 quart baking dish.
- Melt 1 TBL. butter in a large skillet over medium high heat. Saute zucchini in butter until tender, about 3-4 minutes. Drain well.
- Combine Parmesean cheese, mayonaise, sour cream, onion,
green pepper, eggs, salt and pepper in a large bowl. Add the zucchini and toss lightly to mix. Spoon mixture into prepared baking dish.
- Mix bread crumbs and the remaining butter in a small bowl. Sprinkle over zucchini mixture. Bake until lightly browned, about 30 minutes.
- VARIATION: Try adding 1 1/2 cups chopped, seeded fresh tomatoes plus 1/4 cup bread crumbs to the zucchini mixture.
