6 large dried mushrooms
1 onion, chopped
1 tbsp. of oil
1 1/2 cups of canned tomatoes
1 clove of garlic, minced
Salt and ground pepper to taste
2 cups of cooked brown rice
1 1/2 cups of cooked beef in medium chunks
3 ounces of feta cheese, crumbled
6 black olives, pitted and sliced and
2 tbsps. of grated Parmesan cheese
Recipe
1. Put the dried mushrooms in a 1/2 cup of hot water and let it stand for 20 minutes.
2. Sauté the onion in the oil slowly for 5 minutes, then add the tomatoes and garlic and let it cook gently uncovered for about 10 minutes.
3. Add the salt and pepper then add the dried mushrooms and the mushroom soaking liquid then cook for another 5 minutes.
4. Preheat the oven to 400 degrees and line the bottom of 1 1/2-quart casserole dish with 1 cup of the rice, the cooked beef and strew over the top, the feta cheese, the olives and half the sauce.
5. Add the remaining rice and the rest of the sauce then sprinkle with the Parmesan and bake for 20 minutes.
