Recipe Introduction
This recipe makes a wonderfully dense, chewy oatmeal cookie. Try adding butterscotch or white chocolate chips, or using dried cranberries instead of raisins.
List of Ingredients
Sift together thoroughly:
1 3/4 C flour
3/4 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
In a separate bowl, beat together:
1/2 lb (2 sticks) softened butter
1 1/2 (one and a half) C packed brown sugar
1/4 C white sugar
Add and mix thoroughly:
2 large eggs
2 1/2 tsp vanilla
Stir the flour mixture into the butter mixture until smooth and well blended.
Stir in:
3 1/2 C oats
1 C raisins
1 C chopped walnuts
Recipe
Drop dough by large tablespoons onto cookie sheet (I use a cookie dough scoop), about 3 inches apart. With lightly greased hands/fingers, flatten cookies slightly.
Bake about 10-14 minutes, until lightly browned and almost set in center. Let stand on cookie sheet about a minute before removing to a cooling rack.
Makes about 3 dozen cookies, depending on size.
