Shrimp Dip
Source of Recipe
Adapted from a recipe from Avidcook on TOH
Recipe Introduction
This recipe sounds almost too simple, but trust me - the bowl will be all but licked clean!
List of Ingredients
1 pound medium shrimp, (steamed according to Old Bay directions on the box), peeled & chopped into large chunks*
8 oz. cream cheese
2 Tablespoons mayonaise
2 Tablespoons Catalina dressing
2 Tablespoons chopped green onions
*I process about half of the shrimp in my mini chopper to a semi-fine consistency (not too fine!) so that there is a mix of textures in the dip. Also, if I have a beer on hand, I steam the shrimp in beer and the Old Bay.
Recipe
Cream together all ingredients except the shrimp. (This is best done using an electric mixer to get it really nice and creamy.) Fold in the shrimp and sprinkle lightly with Old Bay seasoning. Refrigerate several hours or overnight to let flavors blend. Serve with crackers or sesame bread sticks, and we also like it with the little garlic toasts you can buy (usually near the deli).
Be prepared to give out the recipe!
