    Squash Casserole


    2 lbs. yellow squash
    2 eggs, slightly beaten
    1/4 c. bell pepper, chopped fine
    1/4 c. onion, chopped fine
    1 c. Hellmann's mayonnaise
    1 c. Parmesan cheese, grated
    Salt and pepper to taste

    *Butter crumbs

    About 1/4 pound melted butter
    1/3 cup crumbs.

    Slice squash, steam cook until tender, mash slightly. Beat eggs and
    add remaining ingredients - except butter crumbs. Taste for
    seasoning. Put in buttered 2 quart casserole and bake at 350 degrees
    for 30 minutes - then add buttered crumbs and bake until it browns. –

    Buttered Crumbs

    Mix together both the butter and the crumbs
