Baseball Bars
2/3 c. butter
1/4 c. light corn syrup
1 tsp. vanilla
1 c. brown sugar, packed
1/4 c. chunky peanut butter
4 c. quick oats
Topping:
1 (12 oz.) pkg. semi-sweet
chocolate pieces
2/3 c. chunky peanut butter
1 (12 oz.) pkg. butterscotch
pieces
1 c. unsalted nuts (optional)
Recipe
Melt butter, brown sugar and corn syrup together. Add
peanut butter and vanilla. Mix well; stir in oats. Press
mixture into a greased 9-inch baking pan. Bake at 375 degrees for 15
minutes.
While baking, put chocolate and butterscotch pieces and
peanut butter in a saucepan; heat over medium heat, stirring
until blended. Spread the hot topping on baked mixture;
sprinkle with chopped nuts. Cool; refrigerate. If too cold,
let stand about 15 minutes for ease in cutting. Cut into bars.
Makes 16 to 20 bars.
