    Low Calorie Scalloped Potatoes


    2lb.potatoes pared and thinly sliced(about 5 c.)
    1 c. thinly sliced onion
    2 Tbl. flour
    1 t. salt
    1/8 t. pepper
    1 c. skim milk, scalded
    1 c. chicken broth
    paprika

    Recipe






    Arrange 1/3 of the potatoes in a 2-quart casserole sprayed with Pam. Arrange 1/3 of the onions on the potatoes. Combine flour, salt, and pepper. Sprinkle 1/3 of this mixture over the onions. Repeat layers twice. Pour hot milk and chicken broth over all. Sprinkle with paprika. Cover; bake in 375 degree oven for
    1 1/4 hours. Uncover and bake 30 minutes more. or until potatoes are tender. Makes 5 cups.
