    American Flag Potato Salad


    2 pounds waxy or new potatoes boiled peeled and cut in to bite size cubes
    2 tablespoons red wine vinegar
    1/2 teaspoon salt
    freshly ground black pepper to taste
    1/2 cup mayonnaise
    1/4 cup sour cream
    1/4 cup diced red onion
    2 hard boiled eggs peeled and diced
    1/2 cup diced celery
    1/4 cup diced bread and butter pickle
    3 tablespoons minced chives or scallions

    Recipe



    Combine the just cooked and peeled potatoes with vinegar, salt and pepper.
    Let sit at room temperature for 30 minutes. Add remaining ingredients and
    taste. Add a pinch of salt for extra flavor if you like. Serve immediately
    or refrigerate until serving.

    Serves 4 to 6.
