Mushroom Barley Soup
4 Tbs. - Oil
2 - Carrots, grated
2 stalks - Celery, grated
1 large - Onion, grated
8 cups - Water
1 cup - Barley
1 pkg. - Onion soup mix
6-7 - Mushrooms
2 tsp. - Salt Recipe
Saute carrots, celery, and onions in oil for 15 minutes. Add water. Bring to boil and stir in barley, onion soup mix, mushrooms, and salt. Cook over low heat for 1 3/4 hours. Serves 6-8.
