    Fried Possum


    1 Possum
    1 qt Water
    4 tbl Salt
    Marinade
    1 cup Flour
    1/8 tsp Paprika
    Freshly-ground black pepper to taste
    1 pinch Tarragon
    1 pinch Thyme
    Oil
    Margarine

    Recipe


    Soak possum for 2 hours in salted water. Rinse and dry meat well. Cut meat into chunks to fry. Marinate meat in your favorite marinade for 7 hours. Coat each piece with a mixture of flour, paprika, pepper, tarragon and thyme. Fry chunks of prepared possum in oil and margarine until golden-brown.
