Lemon Pepper Cole Slaw from David
2 t. good quality mayonnaise
1 T. fresh lemon juice
1 green onion, finely chopped, white and green parts
1/2 t. coarsely ground black pepper
1 cup loosely packed, finely shredded green cabbage
Recipe
In a small bowl, mix the mayonnaise, lemon juice, green onion and pepper. This may be done a day in advance. Refrigerate until ready to use. Toss the cabbage with the dressing just before serving. Makes about 1 cup
NOTE: This recipe produces a light and tangy cole slaw, full of fresh crisp flavors.
Besides using it as a sandwich topper, you'll be proud to serve it as a salad on its own.
