Golden Broiled Fillets

1 tbsp. butter or margarine
2 tsp. grated onion
Juice from ½ lemon
¼ tsp. dried tarragon, optional
Cooking oil spray
4 thin boneless, skinless fish fillets (about 6 ounces each), such as flounder, tilapia, trout or walleye (see note)
Salt and black pepper, to taste
Paprika, to taste

Adjust the oven rack about 4 inches from the broiler's heating element, and turn the broiler to high.
Put the butter into a 2-cup glass measure and microwave on high just until melted, about 15 seconds. Stir in the onion, lemon juice and tarragon (if using). Line the inside of a broiler pan with foil. Prepare the cooking rack of the broiler pan with cooking oil spray. Place the fish fillets skin-side down on the cooking rack. Using a pastry brush, brush the tops of the fillets with the butter mixture, using about half of it. Sprinkle the fish lightly with salt, pepper and paprika.
Broil the fish for 4 minutes. Remove the pan from the oven, and brush the tops again with the remaining butter mixture (but do not turn the fillets). Continue to broil until the fish is opaque and flakes easily with a fork, about 2 to 3 minutes more. Serve immediately.
Makes 4 servings.
Note: If the only available fillets are large, cut 2 of them in half to make 4 servings.
