    Potatoes with Hard Boiled Eggs
    Prep: 15 min, Cook: 35 min.


    · 1 lb. new potatoes, scrubbed and peeled

    · 4 eggs

    · 1/4 cup unsalted butter

    · 3 shallots, finely chopped

    · 3 Tbs. white wine vinegar

    Place potatoes in a steamer basket over boiling water. Cover saucepan and steam 20-25 minutes or until tender. Remove from steamer basket, cool slightly, and cut into 1/2 inch thick slices. Place eggs in a heavy saucepan. Cover with water and bring to a boil over high heat. When water comes to a boil, cover saucepan. Remove from heat and let sit 17 minutes. Melt half the butter in a heavy nonstick skillet over medium heat. Add shallots, cover pan and sauté about 10 minutes until softened and lightly golden.

    Drain eggs and rinse under cold water to cool. Peel eggs and cut into 1/2 inch thick slices. Alternate layers of potatoes and egg slices in a buttered shallow baking dish. Sprinkle with shallots and season with salt and pepper to taste. Keep warm. Add remaining butter to skillet over medium high heat. When butter begins to brown, pour over egg mixture. Return same skillet to heat. Increase heat to high. Add vinegar. When vinegar comes to a boil, pour over eggs and serve immediately.
