Roasted Ginger Sweet Potatoes

Recipe Introduction
A nutty, gingery confection of sweet potatoes that will enhance any
of your favorite cold weather foods.
List of Ingredients
Serves 4
1 pound sweet potatoes, peeled & cubed (450 grams)
2-3 Tbl. extra virgin olive oil (15- 45 mil)
1/2 cup real maple syrup (120 mil)
1-2 tsp. grated ginger (5-10 mil)
1/2 tsp. cinnamon (2 -3 mil)
Black Pepper, freshly ground to taste
1/2 cup chopped walnuts or pecans (120 mil)
Recipe
Preheat oven to moderately hot temperature (375 degrees F. or 190 degrees
C.)
Combine potatoes, olive oil, syrup and spices. Toss well.
Lightly oil a medium sized baking dish and spoon in the potato mixture.
Top
with
chopped nuts.
Bake 35 to 45 minutes. Cover with foil halfway through baking if the nuts
are
getting too brown.
