Spicy Cabbage

1 large head of cabbage
1 large yellow onion
1 large bell pepper
2 clove fresh garlic
½ stick margarine or butter
2- 10 oz cans of Rotel Tomatoes- original
1 ½ cups grated cheddar cheese
Salt and pepper to taste
Preheat oven to 350 degrees.
Cut cabbage in quarters- remove core and wash well. Cut each quarter into thirds. Place cut cabbage in large stock pot cover with water and add 3 teaspoons of *salt. Bring to boil and boil about 15 minutes or until tender- Drain well.
While cabbage is cooking- slice onion and bell pepper into thin rings. Chop garlic in small pieces.
Melt margarine or butter in a medium size skillet or sauté pan. Add sliced onions and bell pepper rings sauté for 10 -12 minutes over medium heat. Add garlic and sauté for about 3-5 minutes. Add two can of Rotel tomatoes and heat well. Remove from heat.
Butter a 9 x 13 glass baking dish spread cabbage in dish. Sprinkle with ½ teaspoon of black pepper, add salt if needed- see tip below. Pour onion, bell, and rotel mixture over cabbage. Sprinkle grated cheese over cabbage and veggies. Place in oven and bake uncovered at 350 degrees for 20-30 minutes.
