Apricot And Poppyseed Muffins
1 Jar baby food apricots -(about 2/3 cup)
1 tsp. baking soda
10 tb butter ( 1 1/4 stick)
1 c. sugar
2 eggs
1 1/4 c. flour; sift and then measure
1/4 tea pooon salt
1 ts vanilla
3 tb poppyseeds
Recipe
Preheat oven to 350 degrees. Spray muffin pan with nonstick coating.Spoon baby food into small bowl and stir in baking soda. The mixture will foam up.
In large bowl, cream butter ( or margarine) and sugar until mixture is smooth Then add eggs and mix well. Add flour, salt, vanilla, apricot mixture and poppyseeds. Mix just till moistened. Divide batter among 12 muffin cups. Fill each cup 2/3 cup full and bake for 20-25 minutes.
Cool muffins on rack.
