    Carrot-Sweet Potato Muffins


    2-3/4 cups flour
    1/2 cup sugar
    1/2 cup brown sugar
    1 tablespoon baking powder
    1 teaspoon baking soda
    1 teaspoon salt
    1 teaspoon cinnamon
    1/2 teaspoon pumpkin pie spice or allspice
    1-1/4 cups carrots, shredded coarsely
    3/4 cup milk
    1/2 cup buttermilk
    1/3 cup ricotta cheese
    1/2 cup sweet potatoes, cooked and mashed
    1/4 cup oil
    1 tablespoon vanilla
    2 eggs
    1/2 cup nuts

    Recipe



    Combine first 8 ingredients (dry) in large bowl. Stir in carrots, make a well in center. Combine milk and next 7 ingredients. Stir well with a whisk. Add wet ingredients to dry ingredients, stir just until moist. Spoon batter into 18 muffin cups that have been sprayed with cooking spray. Bake 20 minutes at 400 degrees. Remove from oven and cool.

    You can vary the amounts of carrots and sweet potatoes using a total of 1-3/4 to 2 cups. I also have used regular cottage cheese instead of the ricotta cheese and it works just fine.

    Makes 18 large muffins.
