Lemon Walnut or Lemon Pecan Muffins
Combine:
1/2 cup regular or light (do not use non fat) sour cream
1/2 cup butter, melted and cooled
1/2 cup milk (skim, whole or any combo)
1 egg, beaten
1 teaspoon lemon juice
Combine and blend gently with liquid ingredients:
1 cup white or unbleached flour
1 cup whole wheat flour
1 tablespoon baking powder
1/2 cup sugar
1/4 teaspoon salt
Stir in:
1 cup chopped walnuts
Pour into 12 standard paper-lined muffin cups.
Recipe
Bake at 400° F for 15 to 20 minutes.
