Orange-Berry Muffins
1 Cup oat bran
1 1/2 Cups all-purpose flour
2 Teaspoons baking powder
1/2 Teaspoon salt
1/2 Cup sugar
1 Teaspoon nonfat dry milk
3 Tablespoons margarine -- melted
3/4 Cup fresh orange juice
2 egg whites -- beaten with
1 Teaspoon corn oil
1 Teaspoon vanilla
1 Tablespoon grated orange rind
1 Cup fresh cranberries -- halved
Recipe
Preheat oven to 400 degrees. Grease or paper line muffin pan. In large bowl, combine the oat bran with the flour, baking powder, salt, sugar and dry milk. Mix well. In medium bowl, combine the margarine, orange juice, egg whites beaten with oil, vanilla, orange rind and cranberries. Mix well. Combine dry and wet ingredients. Stir only to moisten; batter will be lumpy. Spoon into muffin pan. Bake 20 to 25 minutes. Remove from pan, and cool on rack.
