Pumpkin Crunch Muffins
1 3/4 cup flour
3 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
2/3 cup milk
1/3 cup vegetable oil
1/4 cup sugar
1/2 tsp salt
1/4 tsp cloves
1/2 cup raisins
1/2 cup canned pumpkin
1 egg
brown sugar
Recipe
Combine flour, sugar, baking powder, salt and spices. Stir in raisins. Combine milk, pumpkin, oil and egg in a small bowl. Beat with egg beaters. Add to dry ingredients all at once. Stir just until moistened. Fill well-greased muffins cups 2/3 full. Sprinkle tops generously with brown sugar. Bake at 400 F for 20 to 25 minutes.
Makes 1 dozen.
