Pumpkin Orange Muffins

2 cups sugar
2/3 cup shortening
4 eggs
1 (15 ounce) can pumpkin
2/3 cup orange juice
3 1/3 cups flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1 cup chopped pecans
1 cup chopped dates
Creamy Orange Butter (recipe below)
Recipe
Cream sugar and shortening until fluffy; beat in eggs. Stir in pumpkin and orange juice. Combine dry ingredients, nuts and dates; stir into pumpkin mixture only until blended. Spoon batter into 30 muffin cups lined with paper baking cups, filling 3/4 full. Bake in a preheated 400 degree oven until tests done with wooden pick (20-22 minutes). Serve with Creamy Orange Butter.
Amount: 30 muffins
Variation: To make pumpkin orange bread, pour batter into two greased 9x5" loaf pans. Bake in a preheated 350 degree oven until tests done with wooden pick (60-65 minutes). Cool 10 minutes, remove from pan. Cool on wire rack.
Creamy Orange Butter: Beat 1 cup butter (softened), 2 (3 ounce) packages cream cheese (softened), 1/4 cup powdered sugar and 2 tablespoons grated orange peel until smooth (1-2 minutes). Refrigerate, covered. Remove from refrigerator before serving.
