Cheesy Potato Casserole
Casserole:
7 red potatoes (medium)
1/4 c. butter, melted
1 onion (small), chopped
1 tsp. salt
1/4 tsp. pepper
8 oz. sour cream
1 can Cream of Chicken soup
2 c. sharp Cheddar cheese, shredded
Topping:
3 T. melted butter
1 ½ c .of Pepperidge Farm Herb Stuffing
Recipe
Boil potatoes until done. Once they've cooled, peel skins and discard. Cut potatoes into chunks and set aside.
In a bowl combine: butter, onion, salt, pepper, sour cream and soup. Stir in potatoes and cheese.
Transfer into 13 x 9 dish greased with Pam.
Mix together topping ingredients and sprinkle over dish. Cook uncovered at 350 degrees for 25 minutes or until bubbly.
