Jalapeño Nachos
1 bag (8 oz.) tortilla chips
1 onion, chopped
2 TB oil
1/2 lb. ground beef
1 garlic clove, minced
Salt and ground black pepper
1/2 tsp. Tabasco sauce hot pepper sauce
1/2 cup pickled jalapeño chiles, drained and sliced
1/2 cup pimiento stuffed green olives, drained
1/2 lb. (8 oz.) white or yellow sharp Cheddar cheese, shredded
Recipe
1. Preheat the oven to 400º F. Arrange the tortilla chips over the bottom of a wide casserole dish
or roasting pan.
2. Peel and dice the onion. Heat the oil in a large skillet over medium heat. Cook the onion for
5 minutes, until translucent.
3. Add the ground beef and cook for 4 minutes, breaking up the meat as it browns. Peel the garlic
and press through a garlic press into the beef mixture. Stir in 1/4 teaspoon salt, 1/2 teaspoon black
pepper, and the Tabasco sauce; remove from the stove.
4. Drain the jalapenos, remove their stems, and cut them into thick rings. Cut the olives in half.
Sprinkle the peppers and olives over the tortilla chips, and distribute the beef on top.
5. Preheat the oven to 350º F. Shred the cheese and sprinkle it over the nachos.
Bake for 10 minutes, until the cheese has completely melted. Serve immediately.
Serves 4 to 6.
