    Breaded Pork Chops (For Cancer Patients)

    Recipe Introduction

    (A low-fiber, low-residue recipe for patients battling nausea.)

    List of Ingredients

    1/2 cup original Bisquick
    12 crushed saltine crackers -- 1/2 cup
    1 teaspoon seasoned salt
    1/4 teaspoon pepper
    1 egg
    2 tablespoons water
    8 pork boneless loin chops (1/2" thick) -- about 2 lbs.




    Recipe

    Mix Bisquick, cracker crumbs, seasoned salt and pepper. Mix egg and
    water in a separate bowl.

    Dip each pork chop into egg mixture, then coat with Bisquick mixture.

    Spray 12-inch nonstick skillet with cooking spray; heat over medium-
    high heat. Cook pork in skillet 8 to 10 inches, turning once, until
    slightly pink in center. Makes 8 servings.
