Sweet Potato Salad
4 sweet potatoes, cubed, boil in water with 1 T lemon juice until tender
1 spanish Onions finely sliced and soaked in water for 30 mins
4 celery ribs strung and sliced on angle very thin
salt and pepper
1 T olive oil
2 T lemon juice
1 cup pecan halves, slightly browned in skillet
1 T butter for browning pecan halves
1 tbs pumpkin seeds
1 T cinnamon
1/4 tsp freshly grated nutmeg
1 T white granulated sugar
1 T light brown sugar
Recipe
As soon as the potatoes are tender enough, have all other ingredients in a large bowl and toss the potatoes through this while still hot. Allow to cool somewhat and serve at room temperature.
