TURKEY AND BLACK BEAN CHILI (Sunday)
Makes about 20 cups

Cooking time: about 45 minutes
2 tablespoons canola oil
3 medium chopped onions
5 cloves minced garlic
1 1/2 pounds ground turkey or chicken breast
2 tablespoons chili powder
1 tablespoon cumin
1/4 cup tomato paste
2 (28-ounce) cans undrained diced tomatoes
3 (15- to 19-ounce) cans rinsed black beans
3 cups fat-free chicken broth
2 1/2 cups beer or fat-free chicken broth
1/2 teaspoon salt
1 1/2 teaspoons pepper
3/4 cup chopped fresh cilantro
In a large Dutch oven, heat oil on medium until hot. Add onions and cook 5 minutes or until softened. Add garlic; cook 1 minute. Add turkey or chicken, chili powder and cumin and cook, stirring often, 8 minutes or until no longer pink. Stir in tomato paste; cook 2 minutes. Add tomatoes, beans, broth, beer, salt and pepper. Bring to boil; cover, reduce heat to low and simmer, stirring occasionally, 30 minutes. Stir in cilantro and serve.
