Pineapple Pecan Cake

- 2 c. sugar
- 2 c. all-purpose flour
- 2 t. baking soda
- 2 eggs
- 1 can (20 oz.) crushed pineapple, undrained
- 1 c. chopped pecans
- FROSTING:
- 1/2 c. butter, softened
- 1 package (8 oz.) cream cheese, softened
- 1-1/2 c. confectioners sugar, sifted
- 1 t. vanilla
Instructions
- In mixing bowl, combine first 5 ingredients. Stir in pecans. Pour into ungreased 13X9X2-in. baking pan.
- Bake @ 350 degrees for 40-45 minutes or til a toothpick inserted near the center comes out clean. Cool cake then top with frosting.
