    Pineapple Pecan Cake

    List of Ingredients


    • 2 c. sugar
    • 2 c. all-purpose flour
    • 2 t. baking soda
    • 2 eggs
    • 1 can (20 oz.) crushed pineapple, undrained
    • 1 c. chopped pecans
    • FROSTING:
    • 1/2 c. butter, softened
    • 1 package (8 oz.) cream cheese, softened
    • 1-1/2 c. confectioners sugar, sifted
    • 1 t. vanilla


    Instructions


    1. In mixing bowl, combine first 5 ingredients. Stir in pecans. Pour into ungreased 13X9X2-in. baking pan.
    2. Bake @ 350 degrees for 40-45 minutes or til a toothpick inserted near the center comes out clean. Cool cake then top with frosting.

    CHEF'S COMMENTS: This is a very good, very easy cake that keeps for days. What more could you ask?
