Cheesy Potato Casserole

- 4 c. potatoes, peeled and cubed
- 1 c. cream-style cottage cheese
- 1 c. sour cream
- 1/2 c. chopped green onion
- 1 T. chopped parsley
- 1 clove garlic, minced
- 1/2 t. salt
- 1/2 c. (2 oz.) shredded cheddar cheese
- paprika
- 1 green onion with top (optional)
Instructions
- Cook potatoes in boiling, salted water 15 to 20 minutes or until tender; drain well.
- Combine next 6 ingredients in a large bowl; mix well. Stir in potatoes. Spoon mixture into a lightly greased 1-1/2 qt. casserole.
- Bake @ 350 degrees for 25 minutes. Top with cheese; sprinkle lightly with paprika. Bake an additional 5 minutes or until cheese melts. Garnish with green onion, if desired.
