    List of Ingredients


    • 4 c. potatoes, peeled and cubed
    • 1 c. cream-style cottage cheese
    • 1 c. sour cream
    • 1/2 c. chopped green onion
    • 1 T. chopped parsley
    • 1 clove garlic, minced
    • 1/2 t. salt
    • 1/2 c. (2 oz.) shredded cheddar cheese
    • paprika
    • 1 green onion with top (optional)


    Instructions


    1. Cook potatoes in boiling, salted water 15 to 20 minutes or until tender; drain well.
    2. Combine next 6 ingredients in a large bowl; mix well. Stir in potatoes. Spoon mixture into a lightly greased 1-1/2 qt. casserole.
    3. Bake @ 350 degrees for 25 minutes. Top with cheese; sprinkle lightly with paprika. Bake an additional 5 minutes or until cheese melts. Garnish with green onion, if desired.


    Final Comments
